This is the second installment in the Happy Pi Day trio of Pies 🙂 This one was my sons favorite.. He just LOVES bananas and strawberries! Again, another super easy recipe.. Delicious and beautiful, people will think you slaved away all day.

Casey’s Amazing Mini Strawberry Banana Cream Pies –
1 package of instant banana cream pudding
2 cups of cold milk
1/4 cup of confection sugar
1 cup of ground graham cracker crumbs
6 tablespoons of melted unsalted butter, melted
1 banana, sliced
2 strawberries sliced
1/2 teaspoon of strawberry salt (optional)
1. Preheat oven to 350 degrees
2. Combine your instant pudding with the two cups of cold milk and whisk for about 2-3 minutes. Pour into a gallon ziplock and put into the fridge to set.
3. Mix together the graham cracker crumbs and confection sugar, slowly pour in the melted butter and combine until you reach a wet sand like consistency. Evenly put into each of your 6 cupcake tin holes. Press into the cups and create your “bowls” Put into the oven and cook for about 10 minutes or until golden brown. Remove from oven and allow to cook fully before using the tip of a knife to carefully remove.
4. Place the graham cracker “bowl” crusts on your serving plate, squeeze the banana cream pudding into the cups, a squirt of whipped cream, one slice of strawberry, one slice of banana and garnish with the strawberry sugar.
You will have left over banana pudding, I like to put the bag in the freezer and have it as a banana “ice cream” 😉 just an idea…
I found the strawberry sugar in my local supermarket in the baking section, If you can’t find this a nice strawberry syrup would also be a good garnish idea!
