Casey’s Banana-n-Oat Cookies – Recipe Corner


Want something yummy and healthy, but you’re pressed for time?

Try out these SUPER simple 2 ingredient cookies!

Spoiler alert: These are great for breakfast.. 

Casey’s Banana-n-Oat Cookies –
2 extremely ripe bananas (darker the better)
1 1/4 cups of quick cook oats

(Optional topping ideas : dark brown sugar, chopped nuts, m&ms, shaved coconut, graham cracker crumbs, wheat germ, confection sugar)

Preheat oven to 350 degrees
1. In a bowl, use a fork to mash your bananas.. Pour in your oats and mix to combine.
2. Wet your hands a bit so the mixture doesn’t stick and create your 12 cookies. (If you are adding toppings, sprinkle over the top now) Place them on a prepared baking sheet and cook for 15 minutes.

Two ingredients, two steps and 20 minutes later you have delicious, naturally sweetened cookies! Plus, you don’t have to throw out those over-ripened bananas….

It’s a win-win! šŸ˜‰
