What if I told you in under 30 minutes you can make delicious and healthy tacos? Well, in under 30 minutes you can make delicious and healthy tacos!! 😉
Casey’s Chicken Tacos with Mango Salsa-
1 1/2lbs of chicken breast
3 table spoons of flavor god Taco Tuesday seasoning**
1 large mango, diced
zest and juice of 1 lime
1/2 cup of minced sweet onion
3 tablespoons of chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon of pepper
1 tablespoon of olive oil
your choice of taco shell/tortilla
1 avocado, mashed
1. Cut your chicken into bite sized pieces, heat a large pan over medium high, spray with cooking oil. Brown your chicken, once browned add in flavor god taco seasoning.. cover and leave on low for 5 minutes to cook through.
2. Meanwhile, in a medium bowl combine the mango, cilantro, onion, lime zest and juice, salt, pepper and olive oil. Toss to marry the flavors.
3. Choose your shell, I like flour tortillas.. I heated it in the microwave for 20 seconds, put a spoonful of chicken and a nice spoonful of the mango salsa! Top with the mashed avocado and enjoy!
The lime from the mango salsa pairs amazingly with the avocado..
All of the textures and flavors really mesh well in this super simple and delicious dish!
**If you do not have the taco Tuesday seasoning, use my taco seasoning recipe: 2 teaspoons of chili powder,1/2 teaspoon of garlic powder, 1/2 teaspoon of cumin, 1/4 teaspoon of black pepper, 1/2 teaspoon of salt, dash of cayenne to taste**
