Casey’s Chicken Tortilla Soup – Recipe Corner

It is getting chilly here in NJ so you know what that means..


This is one of my favorites.. It is super easy, healthy and makes your house smell amazing!

In under an hour you will have a delicious, inexpensive pot of soup.. Can’t beat that 😉

Casey’s Chicken Tortilla Soup – 

10oz of chicken breast

6 cups of low sodium chicken broth

2 cups of water

1 can of diced tomatoes (not drained)

1 cup of red onion, diced

1/2 cup of sweet onion, diced

1/3 cup of minced cilantro, plus 2 tablespoons

3 scallions, sliced thin

1 tablespoon of salt

1/4 teaspoon of pepper

1/2 teaspoon of smoked paprika

1/4 teaspoon of ground cumin

1 1/2 cups of orzo

1. Place your chicken in a pot of boiling salted water. Cook until falling apart, drain and shred with two forks. Set aside.

2. Meanwhile, place your broth, water and can of tomatoes in a large pot. Bring to a boil.

3. Add in your onions, scallions, 1/3 cup of cilantro, reserved chicken and seasonings. Bring back to a boil, cover and simmer for 15 minutes.

4. Remove the lid and pour in your orzo, stir and place the lid back on for 10 minutes. Stir in 2 tablespoons of cilantro and serve!

Try not to burn your mouth like I do.. I get way too excited!

If you are like me and can not wait.. do yourself a favor and throw an ice cube in your bowl 🙂

If you prefer your soup with more broth, you can boil the orzo (or your preference of noodles) separately, drain and add to your soup!

Instead of my usual orzo noodles, I used little alphabet egg noodles.. My son is feeling a bit under the weather so I made his favorite soup! Goes to show you can make this with any small noodle! Experiment with it and let me know how it goes 😉
