Nothing screams Valentines Day like chocolate covered strawberries!! Since the holiday of love is on a saturday this year, wake your hunnie (or kids!) up with this delicious (and healthy, yea you’ll see) twist on pancakes!
Now I mentioned in a previous post this weeks recipes would be easy for the most part.. So, this was written using the boxed Whole Wheat blend Aunt Jemima pancake mix.. I mean, seriously there should be no excuses to not make breakfast! You can even make the batter the night before! Score.
If you would like to make the pancakes from scratch, you can make my Pancake Recipe and just add the pureed beets!!
1 1/4 cup of Aunt Jemima whole wheat blend mix
3/4 cup of milk (I use 2%)
1 tablespoon of olive oil
1/2 teaspoon of vanilla extract
1/2 cup of puree cooked beets (WHAAAAA!? Yes.)
2 drops of red food coloring (if you want them to be a deeper red, fine without it though)
dark chocolate to grate over the top
10 strawberries. cut into thick slices
1. Combine all of the ingredients, except the strawberries, reddi-whip, and dark chocolate.. into a large bowl. stir until just combined. (you don’t want to over-stir or your pancakes will not puff up nicely!)
2. Spray your frying pan with cooking spray and set over medium heat. Using a 2oz ladle, begin to cook your pancakes. Pancakes should only be flipped once, so wait until you see the air bubble and craters then flip your flapjack!
3. Once you make all of your deliciously healthy valentines day colored flapjacks 😉 , you can begin to assemble them. I like to put a layer of the thick cut strawberries between them, top it with whip cream and shave the dark chocolate over the top! Voilà! 🙂
I usually used pure maple syrup or the lower calorie Aunt Jemima brand.. These yummy pancakes will have everyone falling in love & it wont even be lunch time yet! The best part is you have a half a cup of beets in this and you wont even taste it! The kids will just think its food coloring, totally having no clue that they are eating a serving of veggies with their breakfast! If that doesn’t make your heart beat a happy tune, I don’t know what will!
