Casey’s Couscous Salad – Recipe Corner

So I have this yummy vegetarian dish, could be a side.. Could be a main course! You can serve it cold or you can serve it hot! I love food that’s versatile 😉

Casey’s Couscous Salad –

✨2 cups of Israeli Couscous (I used whole wheat)
✨5oz of baby spinach
✨1 cup of diced red pepper
✨1/2 cup of diced red onion
✨3/4 cup of kalamata olives sliced in half
✨2 cloves of garlic minced
✨1 tablespoon of Dijon mustard
✨1 teaspoon of honey
✨3 tablespoons of red wine vinegar
✨2 tablespoons of olive oil
✨salt and pepper to taste

1. Cook your Couscous in boiling water according to package directions. Drain well and pour into a bowl.
2. Stir in your spinach, red pepper, red onion, olives, and garlic.
3. In a small bowl, whisk together the Dijon mustard, honey, oil and red vinegar until smooth. Stir that into your Couscous and season with salt/pepper!

Couscous is basically pasta, so treat it the same way.. Salt it and don’t over cook it 😉 You can make this meal with meat as well, just add in some shredded chicken or cooked ground beef, chicken, turkey or pork! The possibilities are endless!

I like it as a cold salad, but Big Steven loved it hot.. Either way, its yummy! Can’t beat how simple it is to make or how healthy and filling it is!
