Casey’s Crazy Yummy Chilled Noodle Salad – Recipe Corner

Everyone has tried a cold noodle salad.. That delicious noodle concoction with sesame seeds and veggies that makes you want to master using chop sticks..

I have found a few I loved over the years, so I decided to make my own! I think I did pretty well 🙂 but you can be the judge of that!


Casey’s Crazy Yummy Chilled Noodle Salad –

1 box of linguine (1lb)

1/2 cup of peanut butter

1/3 cup of soy sauce

1/3 cup of rice wine vinegar

1/3 cup of olive oil

1 teaspoon of pepper

1 teaspoon of garlic powder

1/2 teaspoon of minced fresh ginger

3 tablespoons of minced cilantro

2 tablespoons toasted sesame oil

2 tablespoons of sriracha

1 1/2 teaspoons of sugar

1 cup of chopped snow peas

1/2 cup of shaved carrot

1/2 cup of thinly sliced red pepper

2 scallions thinly sliced

2 tablespoons of white sesame seeds

1 tablespoon of black sesame seeds

1. Bring a pot of water to a boil, cook your linguine until al dente (we don’t want mushy noodles for this one!) Drain and set aside.

2. Mix together peanut butter, rice wine vinegar, soy sauce, sesame oil, olive oil, pepper, sugar, garlic powder, ginger, and cilantro in a bowl and whisk until combined.

3. Toss your noodles in the sauce until well coated. Mix in the vegetables, scallions, 1 tablespoon of white sesame seeds and half of your black sesame seeds.

4. Cover and refrigerate at least one hour, up to three. When you remove, toss again and top with remaining sesame seeds.

(the bowls picture did not have sliced red pepper, my son isn’t a fan haha.. But afterwards I added it in.. It was eaten so fast I couldn’t get a picture!!)


This is a delish dish for a BBQ or summer get together.. The Cold noodles and a bit of heat from the sriracha and ginger make for a great flavor balance that will have your guests returning for another round!

If you want you can even add shredded cabbage, diced cucumber, shaved onion, bean sprouts, sliced celery.. Mix and match veggies and make it your own!! That’s another reason this dish is great, 2 cups of vegetables in it!! Yum..

This dish will pair well with my Chicken Sticks I made a couple weeks ago.. Throw those bad boys on the grill and boom a great dish you would pay a lot for in a restaurant right there on your table for your friends to envy 😉
