I don’t know about you, but when I get home at the end of the day and it is time to make dinner.. I want it to be as simple as possible!
(with an even easier clean up!)
Nothing is easier than a dish that all the ingredients can just be thrown into one pot and left to cook with little else to do! You can get the dinner set up and go about getting settled into comfy clothes without having to stand over the pot! (the ONE pot that you’ll have to clean.. did I mention you only have to CLEAN ONE POT.. oh, good)
Not only is this dish delicious, but the SMELL that radiates through your home will make your mouth water! I “taste tested” it about 55 times before I served dinner 😉
Casey’s Easy 1 Pot Rice and Ground Beef –
1lb of ground beef
1 (red) packet of sazon
1 teaspoon of black pepper
1 tablespoon of salt
1 teaspoon of granulated garlic
1 teaspoon of dried oregano
1 cup of corn
1/2 cup of chopped olives
1 cup of raw white rice
2 cups of water
1/2 cup of small diced sweet onion
3 tablespoons of chopped fresh cilantro
1. Brown your ground beef in a large pot over medium high heat, breaking it up as you go along into little pieces. Drain the excess fat.
2. Add in the sazon, salt, pepper, and garlic powder and mix to combine.
3. Add in your olives, corn, rice and water. Stir to combine and bring to a boil. Reduce to simmer and cover for 30 minutes.
4. Remove the lid and stir, add in your cilantro and onion. Place cover back on and cook another 10 minutes on low.
Served here with a half an avocado, seasoned with sea salt pepper and cayenne.. and some plantain chips!
