This pepper steak recipe is based off of one of my family favorites! My grandparents always made it for me and my mother made it as well.. It is very nostalgic for me! The smell alone makes me feel warm and happy inside.. This is a great meal to have on a chilly night, curl up and have a hearty bowl of pepper-steak and rice! 🙂
Casey’s Family Famous Pepper Steak –
2lbs of stir fry steak
3 tablespoons of corn starch, separated
2 tablespoons of olive oil
1 cup of lite soy sauce, plus 1 tablespoon
3 cloves of garlic, minced
2 cups of chicken broth
2 medium green peppers, thin sliced (1/4 inch)
2 medium red peppers, thin sliced (1/4 inch)
2 small spanish onions, thin sliced (about 1 1/2 cups)
1 teaspoon of salt
1/2 teaspoon of pepper
- Take your stir fry meat and slice it even thinner, I usually cut each piece in at least half. Mix your meat with 1 tablespoon of corn starch. Heat your oil in a large nonstick pot over medium high heat. Brown the meat completely. Add in 1 tablespoon of soy sauce and the 3 gloves of garlic. Mix and cook until thickened and garlic is aromatic.
- Next, put in your peppers and onions and stir. Mix the 2 cups of chicken broth, 1 cup of soy sauce and 2 tablespoons of corn starch until blended. Pour into the pot, bring to a boil.. reduce to a simmer and cover. Cook for 20 minutes.
- Uncover and cook for an additional 10 minutes to thicken and reduce.
I like to serve this over white rice, but you can have it alone or mixed into pasta if you desire!
White rice is always my goto, though! 🙂
