Casey’s Go Green Noodle Salad – Recipe Corner

Healthy is key nowadays, but you don’t want to give up flavorful foods either!

I’m a big pasta fan (it must be the Italian in me) I hate whole wheat pasta. I rather eat cardboard quite honestly… The way I see it if you are eating pasta, regardless of whole wheat whole grain etc it is still pasta! It’s still carbs, its PASTA. If you want to have some pasta, have what you like..  If you hate whole wheat, have regular.. everything in moderation is the key! Having one bowl of pasta every once in a while won’t make you fat, the same way one salad won’t make you skinny!

This pasta dish is awesome. (and I am not just saying that because I wrote the recipe haha) It is light and the flavors scream sunshine and BBQs!

 

Casey’s Go Green Noodle Salad –

3 cups of pasta (I used cavatappi, but elbow, penne or small shells work too)

1 chicken breast, butterflied

1 cup broccoli florets, cut into small pieces

1/2 cup of carrot ribbons (use a vegetable peeler to make the ribbons)

1 red pepper, diced

the zest of one lemon

2 ripe avocados

1 cucumber, peeled and sliced

1/3 cup of plain yogurt

1/4 cup of parsley

1 teaspoon of salt

1/4 teaspoon of pepper

1/4 teaspoon of cayenne

1/4 teaspoon of garlic powder

1 tablespoon of lemon juice

salt and pepper to taste

1. Cook your pasta according to package directions, drain do not rinse.. set aside in large bowl. Add your broccoli, red pepper, carrot and lemon zest to the pasta and stir to combine. The heat from the pasta will help to cook the vegetables, but not over cook them. We want them to have a nice crunch 🙂

2. Coat a small pan with cooking spray, sprinkle your chicken with salt and pepper and cook, flipping once until cooked through. Remove and cut into small pieces, Add to the bowl. Set aside to cook.

3. Add your avocado, cucumber, yogurt, lemon juice, garlic powder, salt, pepper and parsley to your food processor and pure until smooth. You can also do this in a blender if you need to.

4. Add your sauce to the bowl and stir to combine. Refrigerate until ready to serve.

An awesome and simple dish, with protein, carbs, and vegetables.. a perfect addition to any BBQ or just a great meal in general for a hot day!

You can easily make this recipe vegetarian by just canceling out the chicken breast! Or you can add shrimp in to make it a seafood dish! Play around with it! 🙂
