Casey’s Gratifying Granola Bars – Recipe Corner

So I spent the majority of my day (and my oats) making granola bars today.. Of the 5 recipes I tested, this was by far my favorite!!

I did a no bake, they were sticky yet didn’t hold together.. go figure.

I tried a healthier version, they also fell apart (but now I have some healthy granola for my parfaits right?! Silver linings..)

This recipe I decided to post, has butter and eggs and flour.. oh my! However, they are delish and it is a lot cheaper to make a tray of these and wrap them then it is to buy them for 5 bucks a pop at the store! Also, even with the butter and flour, they still contain nothing artificial or any preservatives so that my friends is a total plus!

Casey’s Gratifying Granola Bars –

1 cup of packed dark brown sugar

1/4 cup of sugar

1 teaspoon of ground cinnamon

1 tablespoon honey

1 tablespoon agave nectar (if you don’t have this just use all honey)

1 stick of butter, melted

1/2 teaspoon of vanilla

1 egg

3/4 cup if flour

1/2 teaspoon of baking powder

1/4 teaspoon of salt

1 1/2 cups of oats

1 cup of cereal (such as rice crispy or any puffed oat I used puffed brown rice crisps)

1 cup of chopped nuts of your choice (I used sunflower seeds, walnuts and sliced almonds)

3/4 cup of chocolate chips or cocoa nibs)

1/2 cup dried fruits of your choice (I used raisins)

1/2 cup of hemp seeds (such as hemp hearts shelled seeds) or use wheat germ

Preheat oven to 350 degrees.

1. Combine your brown sugar, sugar, cinnamon, honey and agave in a large bowl. Pour in your melted butter and whisk to combine. Whisk in the egg and vanilla.

2. Using a rubber spatula, fold in the flour, salt, and baking powder.  Next fold in your oats, puffed rice cereal, nuts, dried fruit and shelled hemp seeds until it is all gooey and stick together.

3. Pour your mixture into a baking dish, either sprayed with cooking spray or lined with parchment for easy lift-out later on.. Place a sheet of parchment over the top and press down with your hands to evenly distribute the mixture and create an even layer. Bake at 350 for 25 minutes or until the edges are golden brown and the middle is set when you giggle it.

4. Let it cool for 10 minutes and then put pan into fridge or freezer for another 10 minutes. Flip over onto parchment, or lift out the parchment if you baked it on top and slice into bars. Wrap in parchment and enjoy for days to come!

These bars are delicious and addicting! They’re great to have on the go for breakfast or as a snack during work. Break them up over some yogurt or have them alone.. anyway you munch these you’ll have a happy yummy!!

Play around with the nuts and fruits you use.. There are hundreds of flavor combos to choose from! So many different nuts and fruits.. You can even use dried coconut or protein powder 😉

Cut them in basic bar shapes or have fun with cookie cutters for the little ones! Cut them into triangles or squares.. whatever your heart desires! They are totally customizable, can’t buy that in the store 😉
