Casey’s Home Made Beef and Broccoli – Recipe Corner

Who else loves to go out for (or order in) Beef and Broccoli?!

Well, why not just make it yourself!?

It really is very simple.. 

 Casey’s Home Made Beef and Broccoli –
1lb of stir fry beef, thin cut
1 tablespoon of corn starch
1 tablespoon of olive oil
1 tablespoon of soy sauce

1 1/2 cups of broccoli, small florets
3/4 cup of small diced red bell pepper
3 cloves of garlic, minced
3/4 cup of water
1/2 cup of soy sauce
2 tablespoons of rice wine vinegar
1 teaspoon of ground ginger
1 tablespoon of sugar
1 1/2 tablespoons of dark brown sugar
1 tablespoon of corn starch
1 teaspoon each salt and pepper

1. Combine the steak, 1 tablespoon each of soy sauce, corn starch and olive oil. Put that in a pot over medium high and brown it. 
2. Meanwhile prep your broccoli and peppers, stirring the beef every so often. Once browned add in the broccoli and peppers.
3. In a bowl combine the final ingredients. After the peppers begin to wilt, about 5 minutes, add in the liquid seasoning and bring to a boil. Cover and simmer for 20 minutes.

Browning the meat with the corn starch mix will help to thicken the sauce later on, as well as give it a nice texture on the outside.

If your mix is too thick, adjust with a bit of water.. too loose, let it boil uncovered for a few minutes!

This dish is done in under 30 minutes, thats quicker than waiting for a delivery order.. Faster than going to dinner and waiting for your food.. Plus you get to cook and eat in your PJs.. Thats always a selling point for me 😉
