These little balls of YUM pair amazingly with seafood, however you can just make them as a side or snack!
Casey’s Hushpuppies –
1/2 cup of flour
1/2 cup of corn meal
1/4 teaspoon of baking soda
1/2 teaspoon of salt
1/2 teaspoon of pepper
2 tablespoons of sugar
1/2 cup of buttermilk
1/4 cup of minced sweet onion
1/4 cup of minced celery
vegetable oil to fry
1. In a large bowl combine your flour, corn starch, salt, pepper, baking soda and sugar.
2. Mix in your eggs and buttermilk until just combined. Stir in your onion and celery.
3. Put about an inch and a half of oil in your pot and heat on medium high.
4. Drop your mixture in, carefully, about a tablespoon worth at a time. You can put in as many will fill your pot, with enough room for them to almost double in size.
They will drop to the bottom and rise up.. once the bottom is browned, carefully use a spoon to gently flip them over. Some may flip on their own! Drain onto a paper towel with slotted spoon and enjoy!
I also like to make these with a corn instead of the celery/onion! Kind of like a corn fritter! Delicious..
