Casey’s Kielbasa, Potato and Kraut Dish – Recipe Corner

Need a quick hearty dish for dinner?

I did too.. So I made this under 30 dinner!

Kielbasa, kraut and potatoes! Simple, flavorful.. comfort food at it’s best!

(Plus, if you have a picky eater.. you can pass it off as hotdogs! 😉 )

Casey’s Kielbasa, Potato and Kraut Dish –
1 tablespoon of olive oil
24oz of your favorite kielbasa
6 medium sized red bliss potatoes
2 cups of sauerkraut
1/4 cup of reserved potato water
1/4 teaspoon of ground nutmeg
1/4 teaspoon smoked paprika
1/4 teaspoon of ground cardamom
Salt and pepper to taste

1. Slice your kielbasa into rings. Heat the olive oil in a large sauté pan over medium and cook your kielbasa mixing occasionally until desired finish. I like them abit burnt on the sides, however they usually come fully cooked so just heating up is ok, too.
2. Peel your potatoes. Slice them in half length wise. Put them in cold salted water, plus the brine from the sauerkraut and bring to a boil. Cook until a knife can easily slice into them, so not over cook.
3. Remove your kielbasa with a slotted spoon and place on a plate. Add your potatoes, the kraut, and 1/4 cup of the potato water into your sauté pan. Mix well.
4. Add the reserved kielbasa back into the pan and season dish with nutmeg, paprika, cardamom, salt and pepper. Serve hot!

I love mashing the potato with my fork and soaking up all the kraut and kielbasa flavored liquid! A nice fork full of potato kraut and kielbasa and I feel like I’m back in Germany!

I like to put some horseradish and/or whole grain mustard on the side to dip my fork into as well.. Delish!
