Yes everyone, you read that correctly.. Lasagna Meatballs!! All the flavor and happiness of a lasagna without the hassle and mess..
Meatballs are one of those great items you can customize and have fun with! Being super kid friendly is definitely a plus for all the parents out there.. I don’t think I have ever met a child who hates meatballs!! Something about the round shape and the sauce to dip it in makes these little fork toppers a hit!
Casey’s Lasagna Meatballs –
3/4 lb of ground turkey
3/4 lb of ground beef
1/4 cup of ricotta cheese
1 tablespoon of marscapone
1 tablespoon of Italian seasoning
1/4 teaspoon of salt, plus more to dust at the end
1/4 teaspoon of pepper
2 lasagna noodles, cooked and diced.
1 cup of marinara sauce (try mine!! http://casey2cook.com/2015/03/21/caseys-spoon-lickn-sauce-recipe-corner/ )
1/2 cup of shredded mozzarella cheese
1 tablespoon of thin sliced basil (optional)
1. Bring water to boil and cook the two lasagna noodles, drain and rinse.. Chop up into small pieces. Place those in a large bowl.
2. Combine your meats, egg, ricotta, marscapone, Italian seasoning, salt and pepper into the bowl with the noodle pieces. Mix them together just enough to make sure everything is evenly together. (You want to avoid over mixing, because you don’t want a stiff meatball!) Form into meatballs (I like to do about half inch to an in in diameter, but you can do smaller for appetizers or larger for a base meal..)
3. Fill the bottom of a large frying pan with your canola oil. Heat over medium high heat. Start placing your meatballs in, move them abit in the hot oil so they won’t stick to the pan. I usually use a large spoon to to flip them, taking care to scrap as close you can to the pan to help release the meatball. It will release when it is ready though, no need to force it 🙂
4. Remove when finished and sprinkle with the mozzarella while they are still hot so it melts amazingly over the top! Serve with the marinara as a dip, and sprinkle with basil if you desire.
There you have it! All the goodness of a lasagna but easy to serve at a party and half the mess/cooking time!!
Plus its super fun to see your friends reactions when they realize you have pasta in their meatball.. I mean how cool is that!? 😉
