Casey’s Lemon Chicken Zoodles – Recipe Corner

I love pasta, but my waist line does not..

(can I get an AMEN?!)

In the mood for spaghetti and trying to cut the carbs out!? You MUST get a spiralizer! You can get them on Amazon or even at Walgreen or CVS in the as seen on TV section! I used mine to make zucchini and yellow squash noodles.. Same concept of pasta, zero carbs! Also works with carrots, cucumbers, etc.. but that’s another blog 😉

Casey’s Lemon Chicken Zoodles – 

1 teaspoon of olive oil

2lbs of chicken breast, cut into 1/4 inch chunks

1 red bell pepper, diced

3 cloves of garlic, minced 

zest of one lemon

juice of one lemon

3/4 cup of chicken broth

1 teaspoon of corn starch

1/2 teaspoon of dried Italian seasoning

1 zucchini, spiraled 

1 yellow squash, spiraled

2 tablespoons of chopped fresh parsley 

1 tablespoon of grated parmesan

salt and pepper to taste

  1. Heat your oil over medium high flame, brown your chicken. Add the red pepper and saute until crisp tender. Put in the garlic and cook until fragrant.
  2. Mix together your lemon juice, zest, broth, and corn starch until blended. Pour into the pan and bring to a boil. 
  3. Next add in your spiraled zucchini and squash, and italian seasoning. Toss to coat.
  4. Stir in your parsley, parmesan and salt/pepper.. taste and serve 🙂
