What do you do when your sugar cookie recipe doesn’t look like sugar cookies?!
You cut that cookie cake and call it a day!
These are lemon vanilla sugar “cookies” and they are delicious..
I can’t lie.. I think I actually prefer them like this, anyway! You can cut them into whatever shape you’d like.. Have the kids make cookie cutter shapes even! They are gooey and chewy and perfect!
Who says cookies have to be round anyway 😉 Live outside the box!
Casey’s Lemon-Vanilla Sugar “Cookies”
2 sticks of softened butter
1 1/2 cups of sugar
1/2 cup of dark brown sugar
1 teaspoon of vanilla
2 tablespoons of lemon zest
2 tablespoons of lemon juice
3 cups of flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
Extra granulated sugar to sprinkle over the top!
Preheat oven to 350, cover your 3 baking sheets with parchment and apart with nonstick.
1. Cream together butter and both sugars until blended. Mix in your egg, vanilla, lemon zest and juice.
2. In a large bowl, mix together the flour, baking soda, baking powder, and your sugar.
3. Pour your sugar mixer into the flour bowl and use a rubber spatula to combine the two and make your batter.
4. Wet your hands a bit to handle the dough, it will help it not to stick to your fingers. Roll balls of dough about 3/4 inch thick. Place them on your trays, 12 to a tray, in 4 rows of 3.. An inch apart. Place into the oven and cook for 14 minutes. The dough will all melt together to form your sugar cookie “cake”!
