Happy Pi day!! In honor of this holiday, I decided to make 3 mini pie recipes today. Now if you know me, you know I am NOT a pastry Chef by any means! So you know right off the bat these are so easy a Casey can do it! 😉
Casey’s Mini Apple Pie Roll Ups –
1 8oz container of Pillsbury crescent rolls (original or reduced fat)
1 teaspoon of apple pie spice, recipe at the bottom of the blog* + 1/4 teaspoon to dust
1/4 cup of packed dark brown sugar
1/3 cup of coarsely chopped walnuts
1 Granny smith apple (green apple) thinly sliced
2 tablespoons of melted butter
1. Preheat your oven to 375 degrees, Line your baking sheet with parchment and spray lightly with cooking spray.
2. Mix together the 1 teaspoon of apple pie spice and brown sugar. Arrange your crescent triangles on your work area and evenly cover with brown sugar mixture. Next, evenly sprinkle your walnuts over the sugar.
3. You should have about 4 thin slices per triangle of apple, place on the wide part of the triangle (you may add some more if you have extra and love apples but do not over fill) Begin to roll from the wide side until you have your rolls closed up. I fold one of the corners down to seal one side and allow the other to remain open so you can see the beautiful apple popping out.
4. Generously brush the tops with your melted butter and sprinkle the remaining 1/4 teaspoon of apple pie spice over the tops of the apple pie roll ups. Place them on the prepared baking sheet and put it into the over for 12 minutes or until golden browned.
Feel free to serve these with some vanilla ice cream or drizzle with caramel syrup!! Cool whip is also an option, but all alone is perfectly amazing 🙂
*Apple Pie Spice:
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon of ground cardamom
You can make a big batch and put it into an old cinnamon container like I did, or just make it as you need it 🙂
