So I recently went to my second Billy Joel concert! His 65th show at MSG! Record breaking, legendary! (If you know me, you know I love me some Billy Joel music!!)
Things are ok for me these days.. (can’t help it, have to make song references) I went alone, had a seat on the floor.. one section from the stage and I danced and sang the entire night! Epic.. (thanks for the ticket, Mom!) I’m working my way up closer each time I go.. Next time I hope to be front row.. Billy, it’ll be you and I – face to face!
Well, ever since that night I can not stop singing his songs, even more so now than usual if that’s even possible! 😉 I am even listening to the MSG Live album right now as I type this.. no judgement please.
I decided to have my own ‘Scenes From An Italian Restaurant’ dinner tonight and make my favorite appetizer dish! Mussels in red sauce.. Yum! You can pair this with a nice linguine or angel hair if you would like, it all depends on your appetite.. simply double the sauce portion of the recipe. (the first five ingredients, and salt/pepper to taste)
Casey’s Mussels in Red Sauce –
1/4 cup of extra virgin olive oil
4 cloves of garlic, minced
3 tablespoons of peppadew, finely chopped
(you can use red cherry peppers too for more spice)
1 shallot, minced
1 cup of crushed tomato
1/2 teaspoon of dried oregano
1 teaspoon of salt
1/2 teaspoon of pepper
1/2 cup of red wine
1 tablespoon of butter
1 1/2 lb of mussels, scrubbed * How To Clean Mussels *
chopped fresh parsley for garnish
1. In a large saute pan, heat your oil on low. Add in your garlic, peppadew and shallot.. cook on low for a few minutes until softened and exquisitely fragrant! Mix in your crushed tomato, oregano, salt and pepper. bring to a boil and return to low and simmer.
2. Meanwhile, bring your red wine and butter to a boil. Toss in the mussels and cover, cooking for about 6 minutes until they open fully. Uncover and give them a nice stir. Using a slotted spoon, remove the mussels and place them into your red sauce.
3. Allow the wine to boil and reduce by half, add your wine into the saute pan and mix everything together. Serve immediately, garnished with the parsley!
There you go, can’t tell you more than I told you already.. 😉 It is that simple ladies and gents! Delicious too..
So I urge you to put on a nice Billy Joel playlist, grab a bottle of red.. or a bottle of white, whatever kind of mood you’re in tonight.. (sorry, I can’t help myself) make this dish and enjoy yourself! Brenda and Eddie would.. 😉
