Casey’s One Pan Tender Chicken and Veggies – Recipe Corner

Let me start by saying this.. I know I’ve been “MIA”

My son started school so he (and I) have been sick on and off unfortunately!! All those new germs.. ugh! 🙁

However I’m feeling better and I made a kick-ass dish for you all!

It’s a one pan dish so it’s easy clean up.. Super easy, healthy, and delish!

Casey’s One Pan Tender Chicken and Veggies –

1 tablespoon of oil
2lbs of chicken tenderloins
1 cup of potato peeled, 1/4in slices
2 cups of small broccoli florets
1 cup of grape tomatoes, halved
1/2 cup of kalamata olives, pitted and halved
1/2 cup of white wine
1 cup of chicken stock
1/4 teaspoon each salt and pepper

1. Heat your oil in a large skillet over medium high. Brown the chicken tenderloins on both sides.
2. Add in the broccoli, potato, tomatoes, and olives.. Followed by the white wine and let it come to a boil and stir to evenly distribute the ingredients.
3. Next put the chicken stock, bring to a boil.. Reduce to a simmer and cover for 15 minutes.
4. Uncover and let simmer another 10 minutes or until the liquid reduced by half. Sprinkle with salt and pepper.. Enjoy!

The flavors of this dish are amazing together! The chicken literally falls apart.. The tomatoes, stock and wine create an amazing sauce that is slightly thickened by the starch in the potato! It just totally works.
