Casey’s Poppin’ Jalapeno Popper Dip – Recipe Corner

Yes.. you read that right! JALAPENO POPPER DIP! I’ll wait while you clean the drool off your chin……

Ready? Ok! 🙂

So going along with the Super Bowl theme, I wanted to make my favorites.. Jalapeno Poppers are most definitely top 5 for me! I was going to write the recipe for how I make the standard poppers…

(goto store. buy frozen poppers. go home. bake poppers. eat them all)

BUT I figured creating my own remix would be better 😉 So I think a dip is awesome for a Superbowl get together.. Everyone stand around the dip, chatting and eating! Or if you prefer you can get a nice spoonful and be on your way!

Poppin’ Jalapeno Popper Dip

1 4oz can diced green chillies

1 80z  reduced fat cream cheese, at room temp

1 cup of reduced fat sour cream

2 cups of reduced fat cheddar cheese

1 cup of shredded parmesan

3/4 cup of italian bread crumbs

4 tablespoons of butter, melted

1 tablespoon of dried parsley flakes

1/4 teaspoon black pepper

1. Pre heat your oven to 375 degrees

2. Combine chillies, sour cream, cream cheese, cheddar cheese and 3/4 of the parmesan in a mixing bowl. Mix well and then smooth evenly into your 8×8 oven safe pan.

3. In a small bowl place breadcrumbs, parsley flakes, black pepper and remaining parmesan. Mix well. Pour in melted butter and blend with your hands until all bread crumbs are moistened.

4. Spread the breadcrumb mixture evenly over your pan. Place in the oven for 15 minutes, or until breadcrumbs are golden and the inside is heated through.

Serve this dip with tortillas, crackers, sliced italian bread, or if you want to be a bit healthier some cut up celery and carrots! All equally delicious..

The chillies have just enough kick and the sour cream helps to cut the heat.. They just work so well together! The crunch of the breadcrumb and the smooth warm creamy cheese mixture is just heavenly! When you taste this dip, the first thought in your mind will be “WOW.. IT TASTES JUST LIKE I AM EATING A JALAPENO POPPER!” & that makes me feel really good about this recipe!

-Using the reduced fat ingredients is totally up to you, for example regular cream cheese will produce the same outcome.. you will just feel a bit more naughty 😉 but I mean hey, Super Bowl is once a year right?!

Warning This dip is dangerous. I ate about 1/3 of the tray as I am sitting here writing the blog haha, so make with caution 😉
