Cauliflower is an amazing vegetable and is often looked over.. Cauliflower is low in fat, low in carbohydrates and high in dietary fiber, folate, water, and vitamin C.. thus possessing a high nutritional density!
I chose to roast it before mashing instead of boiling because you lose a lot of nutrients when you boil! Unless you are using the water in the dish, a lot of the healthy stuff goes down the drain.. (literally)
I also wanted a hint of the roasted garlic flavor! Yummy 😉
1 head of cauliflower
1 shallot, sliced
3 cloves of garlic
2 tablespoons of olive oil
2 tablespoons of water
1 teaspoon of salt
1/2 teaspoon of pepper
1 tablespoon of butter, room temperature
1/2 cup of milk (can also use cream or almond milk, etc)
Preheat oven to 375 degrees.
1. Remove the stem from the cauliflower and cut the florets into bite sized pieces. Place on a baking sheet prepared with aluminum foil. Add sliced shallot, whole garlic cloves, and toss with olive oil. Sprinkle salt and pepper and place into oven for 30 minutes.
2. After 30 minutes, cover with foil and cook for another 6 minutes. Remove and place into food processor, add in butter and milk, and puree until smooth.
Looks like mashed potato, but a lot healthier! This recipe is easy and nutritious.. I’m sure you’ll love it!! xo
