Tis the season for farmers markets and fun delicious produce! Today I snagged these beauties.. rainbow carrots! Great color and they don’t fade when you cook them!
I decided to do a quick roast on these babies.. Brightened the flavor with lemon juice and chili powder, bright flavor to match a bright veggie 😉
1 bunch of Rainbow carrots (or plain)
1/4 teaspoon of salt
1/8 teaspoon of pepper
1 tablespoon of olive oil
1 tablespoon of lemon juice
1/4 teaspoon of chili powder
Pre heat oven to 375 degrees.
1. Peel carrots and cut into long slices, try to keep the sizes similar so they roast in unison. I usually cut off the skinnier part and half it and then quarter the thicker portion.
2. Toss with salt, pepper and olive oil, place on baking sheet prepared with aluminum foil.. Put into oven and cook for 30 minutes or until desired tenderness.
3. Sprinkle with chili powder and squeeze fresh lemon over, toss to combine.
..BadaBing BadaBoom! Done..
Super easy, super delish, super healthy! Great dish to pop in the oven and and forget about for a half hour while you cook the rest of your meal!
Don’t fret if its the dead of winter and you can not find rainbow carrots, this recipe can also be done with regular carrots! They will be equally delicious and nutritious!
The chili powder and lemon are great ways to speed your metabolism, paired with a nice roasted vegetable this makes for a fabulous healthy side dish!
It’s also kid friendly, just roast and salt/pepper them.. the kids love the colors!! 🙂
