Casey’s Rocky Road Cookies – Recipe Corner


I know everyone has rocky days.. so I made something sweet to make your day better!
Rocky Road inspired chocolate chip cookies! (See what I did there, rocky πŸ˜‰ )

Casey’s Rocky Road Cookies –

3/4 cup granulated sugar
3/4 cup packed dark brown sugar
2 sticks of butter or margarine, softened
1 teaspoon of vanilla
3 eggs
2 1/4 cups of flour
1 teaspoon of salt
1 teaspoon of baking soda
1/2 cup of chocolate chips
1/2 cup of graham cracker crumbs
1/2 cup of mini marshmallows
1/2 cup of sliced almonds

Preheat oven to 325
1. Cream together your sugars, margarine, vanilla and eggs until smooth.
2. With a wooden spoon or dough hook on your electric mixer, mix in your flour, salt and baking soda.
3. Fold in your chocolate, crumbs, marshmallows and almonds. Place dough into the fridge for 15 minutes to cool.
4. With slightly wet hands, make 1in balls of dough and place them at least 2 inches apart on your prepared baking sheets. Bake for 15 minutes, remove from tray to cool.. Enjoy!

This recipes makes one and a half dozen cookies.. which you will eat in one sitting, oh wait is that just me?! 

I didn’t want to make a chocolate based cookie, and I was going to just make chocolate chip cookies… (follow this recipe but use 2 cups of chocolate chips and none of the other add-ins) but I thought it would be a fun idea to mix it up.. No pun intended πŸ˜‰

The marshmallows keep the cookie moist and sweet.. While the almonds add great texture and bring out the salt! MMmmmMm

So grab an ice cold glass of milk, put your feet up and enjoy some cookies.. you deserve it!
