Casey’s Salsa de Aji Picante – Recipe Corner

Seeing as Super Bowl is next Sunday, this week each day I will be posting a fun easy “Superbowl” type food.. Just to give you some ideas 🙂

In honor of Colombia winning Miss Universe 2015, and Superbowl next week… I decided to post my Colombian Salsa!! Salsa de Aji Picante (doesn’t it even sound like a good time!?)


Salsa de Aji Picante

1/4 cup of cold water

1/4 cup of white wine vinegar

the juice of 1 lime

1 teaspoon of sugar

1 1/2 teaspoon ground sea salt

1 medium jalapeno (seeded if you prefer a more mild salsa)

1 medium onion, half chopped half diced

3 vine ripe tomatoes, diced

1/2 cup of chopped cilantro, chopped

4 scallions, green and white, chopped

1/4 cup olive oil

black pepper to taste

1. Place your vinegar, water, lime juice, chopped onion, jalapeno, salt and sugar in your chopper. (food processor or blender work as well!) Blend until smooth and pour into a  medium bowl.

2. Cut your tomatoes in half and squeeze any liquids into the bowl. Remove the insides of the tomato to throw out (or use in a salad, yum) then dice and add to the bowl along with your scallions, diced onion, and cilantro.

3. While stirring with a fork swiftly, slowly add in your oil. Season with black pepper to taste!

I like to Serve this delicious and healthy Salsa with some nice Blue Corn tortilla chips, but you can serve it with whatever you desire… Another amazing idea is to use it as a salsa with your tacos, over some lettuce as a dressing or even drizzle over grilled steak/ chicken.. YUMM! This recipe makes approximately 2 and a half cups of salsa.. Seems like a lot but it goes quick!
