Casey’s Simple Zucchini Noodles – Recipe Corner


Hey there 🙂

Do you need a quick simple and delicious dish for dinner?! or lunch?! or heck even breakfast!?

Check out my zucchini noodles! 

Casey’s Simple Zucchini Noodles –

2 tablespoons of olive oil
3 medium zucchini, spiraled
2 ears of corn, or one 14oz can
2 red peppers, diced
1 pint of grape tomatoes
4 cloves of garlic, minced
1 teaspoon of salt
1 teaspoon of pepper

1. Place your olive oil in a large pot over medium-high heat. Toss in your corn, red peppers and garlic. Stir until fragrant, about two minutes.
2. Add in the tomatoes and close the lid for 5 minutes.
3. Meanwhile, use a towel to squeeze out some of the excess moisture from the zucchini “noodles”. Place those into the pot along with the salt and pepper, stir to combine and cover for another 8 minutes.

Your tomatoes will be bursting to join the olive oil, garlic and salt/pepper to create a nice subtle sauce for your zucchini.

The “noodles” should be ready after the 8 minutes. If you would like them cooked some more, simply let them stay over the heat for a bit longer. Just make sure you continue to stir.

If you like a little heat like I do, toss in a 1/4 teaspoon of red chili flakes! I keep them separate because my son loves this dish.. However i love the chili flake addition!!
