In the mood for a quick healthy stir fry?
Here is what you’ll need:
✨1/2lb of stir fry steak, thin sliced
✨1 tablespoon of olive oil
✨1 clove of garlic, minced
✨4oz rice vermicelli noodles
✨2 tablespoons of rice wine vinegar
✨2 tablespoons of soy sauce
✨2 tablespoons of mirin
✨1 tablespoon of toasted sesame oil
✨1/4 teaspoon of chili flake
✨salt and pepper
✨1/2 cup of sugar snap peas
✨1/4 cup of carrot matchsticks
✨2 tablespoons of chopped cilantro
✨2 scallions sliced thin
1. Heat your oil in a sauté pan over medium high heat. Brown the steak completely.
2. Add into that pan your mirin, soy sauce, rice wine vinegar, toasted sesame oil, garlic,and seasonings. Cover and simmer for 5 minutes.
3. Meanwhile, cook rice noodles by package direction. I bring water to a boil shut it off and add noodles, let them steep for 5 minutes then drain.
4. Uncover your steak add in snap peas, carrot and stir for 2 minutes. Add in noodles and cook stirring to mix evenly. Add cilantro and scallion, mix and cook for another 2 minutes more before serving.
You can do this with shredded cooked chicken as well or even no meat at all 😁
