Casey’s Summer Citrus Fennel Salad – Recipe Corner

Fennel is one of those amazing versatile vegetables.. You can have it raw, roasted, grilled, broiled.. it is amazing anyway you slice it (pun intended) 😉

This is an amazing bright, refreshing salad for a hot day.. Chilled to perfection it will help cool you off on the hottest summer day! With just the right amount of citrus, and all of the textures this dish will have your guests going back for seconds and thirds!


Casey’s Summer Citrus Fennel Salad –
1/4 cup of olive oil

3 tablespoons of fresh squeezed lemon juice

the zest of one lemon

1 teaspoon of salt

1/2 teaspoon of black pepper

1/2 teaspoon of granulated garlic

1/2 teaspoon sugar

1 large fennel bulb, thinly sliced (reserve 2 tablespoons of fennel fronds to garnish)

1/4 cup of thinly sliced red onion

1/2 cup of thinly sliced orange bell pepper

1 cup of grape tomatoes sliced in half

1/3 cup of kalamata olives sliced in half

3 tablespoons of crumbled feta cheese

1. In a large bowl, whisk together your oil, lemon juice, zest, salt, pepper, garlic and sugar until well blended and emulsified.

2. Add the remaining ingredients (except the feta) to your dressing bowl and toss to coat. Top with feta cheese and fennel fronds and serve chilled.

 

It is THAT simple!!

The feta is optional, I know not everyone likes feta! I am not even a fan, but in this salad it just works so well that I enjoyed it! As always, use my recipe as a guideline and swap out things you want to.. If you prefer red bell peppers, go for it! That is the beauty of making your own food, you are in the driver’s seat! 😉
