We’ve all tried the avocado baked egg.. But what about egg baked into a tomato?!
My son LOVES tomatoes, so I figured I would give it a try and it was D E L I C I O U S !
Casey’s Tomato Egg Surprise –
✨4 vine ripe tomatoes
✨salt and pepper or whatever seasoning you like.
Pictured below.. I added 1 teaspoon of corn and a pinch of cilantro under the egg, and a tablespoon of mozzarella over the egg.. You can add whatever you’d like under the egg though!
Preheat oven to 450
1. Cut open the top of your tomato and carefully use a small spoon to remove the insides. You can use the insides to make a quick pasta sauce for your lunch, find one on my blog 😉..
2. Place the tomatoes onto your baking pan, crack your egg into the tomato, add your seasoning and place them into the oven for 15 minutes. Check from 10 minutes on.. As some ovens are different and to how you want the egg cooked!
An update, I made them again.. This time with broccoli and fresh corn! Still the same deal, the egg and mozzarella on top! Delicious..
