Casey’s Under 30 Stuffed Jalapenos – Recipe Corner

With a short list of ingredients, this quick and delicious dish is not only a crowd pleaser, but awesome for the cook too!

Quick tip, when choosing your jalapeños, make sure to buy them all uniform in size! If you want them large, get them all large.. small is your preference? Make sure they are all small! You want them the same or similar sizes so they will cook at the same pace!

Casey’s Under 30 Stuffed Jalapeños –

2lbs of jalapeños

10oz of cream cheese, room temp to soften or buy whipped

1lb of hot sausage (or sweet if you prefer)

1 cup of shredded parmesan cheese

Preheat your oven to 400 degrees

  1. Remove your sausage from the casing. In a medium saute pan over medium heat, cook your sausage until browned. Drain and remove from the pan to cool.
  2. Slice your jalapeños in half, try to keep the stem intact for decorate purpose. Carefully clean out the inside, making sure to remove the white and seeds.. without piercing the bottom of the skin. Set aside. (make sure to wash your hands well!)
  3. In a medium bowl, combine your cream cheese and parmesan cheese. By now your sausage should be cool enough to handle with your hands, crumble it up and add to the mixture.
  4. Stuff your jalapeños evenly with the mixture. Bake for 15 minutes or until bubbling and browned. Let them sit 5-10 minutes before serving. Sprinkle with salt and black pepper right before you serve!
