Caprese Salad, Caprese Salad.. Wherefore Art Thou Caprese Salad?! It is right here!! I chose this classic Italian appetizer for my Valentine’s Day appetizer post because it is simple and delicious! I just used some fun cookie cutter shapes to make it Valentines Day appropriate 😉

Casey’s Wherefore Art Thou Caprese Salad –
1 lb of fresh mozzarella
2 beefsteak tomatoes
1 tablespoon of balsamic reduction**
1 tablespoon of extra virgin olive oil
4 basil leaves, sliced thin
salt and pepper to taste
1. Slice your mozzarella into 1/4 inch slices, length wise. You want to have a fairly large surface area so you can make your shape with the cutter!! Once you cut all of the slices, using your heart-shaped cutter, make each one into a heart. Reserve the remaining mozzarella for later use. (like for dinner if you follow my menu plan 😉 )
2. Next, Cut your tomatoes into slices.. Same concept, cut each slice into a smaller heart shape. Reserve the remaining tomato scraps for another use. 😉
3. Arrange your mozzarella and tomatoes on the plate, drizzle with the balsamic reduction and extra virgin olive oil. Salt and pepper to taste (remember, taste your mozzarella first! A good mozzarella should be salty so you don’t want to over salt..)
4. Garnish with the thinly sliced basil, I like to put it to the side because not everyone loves basil.. but you can put it on top!
There you have it!
Simple, Easy and Adorable!!
You can’t tell me this is not something you can totally throw together at home for your Valentines dinner!! Go for it, you won’t regret it…
**Balsamic reduction can be found now bottled. It is a thicker sauce-like balsamic vs the usual vinegar. You can also save money and make your own by cooking your balsamic vinegar in a small sauce pan and reducing it by half! I forewarn you, do not inhale close to the pot when you are cooking it down.. it’ll burn your nose! Ouch.
