German Apple Pancakes – Recipe Corner

German Apple Pancakes for the win!

My Oma and Bebop used to make me these when I slept over their house on the weekends and they were my favorite! Time to introduce them my my son…

Here is what you’ll need-
4 eggs
1 3/4 cups of whole milk
1 1/4 cups of flour
1 teaspoon of sugar
1/2 teaspoon of salt
1/4 teaspoon of nutmeg
1/2 teaspoon of vanilla
4 tablespoons of butter, melted
1 Granny Smith Apple, peeled and sliced thin

1. In a large bowl, mix together the eggs until smooth. Add in the milk, flour, sugar, salt, nutmeg and vanilla.
2. Whip in your melted butter until smooth. Stir in your thin apple slices.
3. Over medium heat, spray or butter your pan slightly. Add in enough batter to cover the bottom of your hot pan. Swirl as you pour to assure the batter is being distributed evenly. Remember, you want them thin.
4. Cook for about a minute on the first side or until browned to your liking, turn and cook another 10-20 seconds.

I like to serve sprinkled with a mixture of cinnamon sugar! (I wait until i have a ground cinnamon container that is a little more than half way empty and add sugar in. Use that as your cinnamon sugar! 🙂 )
